Directions
For the Dijon Mustard Sauce:
In a small bowl, whisk together the vegan mayonnaise, Dijon mustard, lemon juice, dried tarragon (if using), salt, and black pepper. Adjust the seasoning to your liking.
For Assembling the Burger:
Spread the Dijon mustard sauce on the bottom bun.
Place a lettuce leaf on top of the sauce.
Add a lentil patty to the lettuce.
Top with sliced tomato, sliced red onion, and pickles.
Place the top bun on the stack.
