Steps

1
Done

For the Black Bean Patties:

2
Done

In a food processor, combine black beans, rolled oats, chopped onion, minced garlic, ground cumin, smoked paprika, chili powder, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.

3
Done

Shape the mixture into burger patties. If the mixture is too wet, you can add a bit more rolled oats to bind it.

4
Done

Heat a skillet over medium-high heat and add a bit of cooking oil.

5
Done

Cook the black bean patties for about 4-5 minutes on each side, or until they are heated through and have a crispy exterior.

6
Done

For the Chimichurri Sauce:

7
Done

In a bowl, combine chopped fresh parsley, chopped fresh cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Mix well.

8
Done

For Assembly:

9
Done

Toast the burger buns in the skillet or oven until they are lightly browned.

10
Done

Spread a generous amount of chimichurri sauce on the bottom bun.

11
Done

Place a black bean patty on top of the sauce.

12
Done

Add sliced tomato, sliced onion, and lettuce leaves.

13
Done

Top with more chimichurri sauce and the top bun.

14
Done

Optionally, spread vegan mayo on the top bun for extra creaminess.

15
Done

Serve your Vegan Brazilian-Inspired Black Bean Burger with a side of Brazilian-style yuca fries or a salad for a complete meal!
