1 can red kidney beans, drained and rinsed
1/2 medium onion, chopped
3 cloves garlic, minced

Salt and pepper, to taste
Directions:
1. Begin by cooking your rice according to package directions. Make sure that the rice is fully cooked before moving onto the next step.
2. While the rice is cooking, prepare the rest of the ingredients. Drain and rinse the beans thoroughly and place them into a large bowl. Add the chopped onions and mashed garlic, mix well to combine all the ingredients together.
3. Once the rice has finished cooking, season it lightly with salt and pepper and set aside.
4. Meanwhile, heat up a pan over medium high heat. Add both types of oil to the pan and allow them to warm until they begin to smoke slightly.
5. Remove the beans from their can and transfer them directly to the hot pan. Stir constantly until the beans start to brown around the edges, about 5-7 minutes.
6. Next, add the roasted tomatoes to the pan along with the spices. Mix everything together and continue to stir until the beans have absorbed the sauce evenly.
7. When the beans and tomato mixture is ready, carefully pour the entire contents of the pan back into the bowl containing the rice. Combine the two ingredients together to form one hearty meal.
8. Season the dish again with salt and pepper if necessary and serve immediately. Enjoy!
