1 pound fresh sweet potatoes, peeled and cut into quarters
1/2 cup all-purpose flour
1/2 teaspoon baking powder
Salt and black pepper to taste
1 tablespoon olive oil, plus more as needed
1 medium onion, chopped
3 cloves garlic, minced
1 jalapeño pepper, seeded and finely chopped (about 1/2 cup)
1 cup vegetable stock
1/2 cup sour cream
1/2 cup plain Greek yogurt
1/2 cup heavy whipping cream
Instructions:
Step 1: Prepare the Sweet Potato Fritters
Preheat the oven to 400°F. Line a large rimmed baking sheet with parchment paper and set aside.
Cut the sweet potatoes into quarters, then transfer them to a mixing bowl. Add the flour, baking powder, salt, and pepper to the potatoes, and gently toss until evenly coated.
Heat a small amount of olive oil in a skillet over medium heat. Carefully place the sweet potato pieces in the hot pan, being careful not to crowd the pan, and cook for about 8 minutes per side, or until golden brown and crisp. Remove from the pan using tongs or slotted spoons, and transfer to the prepared baking sheet. Repeat with any remaining potatoes, and continue cooking until golden brown and crisp on both sides. Transfer the fritters to a wire rack set inside a roasting pan, and keep warm while you prepare the rest of the recipe.
Step 2: Make the Jalapeño Cream Sauce
While the sweet potato fritters are cooking, begin making the creamy jalapeño sauce. In a medium saucepan, combine the chopped jalapeño peppers, onions, garlic, vegetable stock, and sour cream. Season with salt and pepper to taste. Bring the mixture to a boil over high heat, reduce the heat to low, and simmer for about 10 minutes, or until thickened slightly. Stir occasionally during cooking to prevent burning.
Remove from the heat, and puree the sauce with an immersion blender or food processor until smooth. Set aside to cool completely before proceeding with the next step.
Step 3: Assemble and Serve the Dish
To assemble the dish, start by spreading a layer of Greek yogurt on each sweet potato fritter. Top with the jalapeño cream sauce, and then sprinkle lightly with shredded cheddar cheese. Garnish with chopped cilantro, if desired, and serve immediately. If desired, you can top each serving with a drizzle of heavy whipping cream, or a few drops of lime juice for additional acidity.
