For the Coconut Whipped Cream:
1 can full-fat coconut milk (from the refrigerated section), well shaken
1-2 Tbsp granulated sugar (to taste)
1 tsp vanilla extract
Instructions:
Day 1:
1. In a medium bowl, whisk together the almond milk, matcha, vanilla extract, and salt until well combined.
2. Add 1/2 cup of the chia seeds and mix until no pockets of dry ingredients remain.
3. Divide the mixture evenly between four parfait glasses or small jars. Set aside at room temperature overnight.
Day 2:
4. Meanwhile, prepare the mango topping by mixing the mango and maple syrup (if using) in a small bowl.
5. Once you’re ready to assemble the parfaits, carefully remove each chia pudding from the fridge and gently stir before dividing among the prepared glasses.
6. Top each pudding with a generous scoop of coconut whipped cream and mango toppings. Garnish with additional fresh mint leaves if desired.
