1 cup unsweetened almond milk (or your preferred non-dairy milk)
1/2 cup unsweetened coconut milk (canned, full-fat)
3 tbsp. raw organic agave nectar (or maple syrup)
Pinch of sea salt
For the passion fruit sauce:
1/2 cup unsweetened passion fruit purée (about 3-4 large fruits)
1/4 cup water
1 tbsp. raw organic agave nectar
1 tsp. cornstarch
pinch of sea salt
For the topping:
1 ripe mango, sliced into thin pieces
2/3 cup unsweetened shredded coconut
1 tbsp. extra virgin olive oil or ghee (optional)
pinch of cayenne pepper or red pepper flakes (optional)
Instructions:
To prepare the chia puddings:
1. In a blender or food processor, combine all the ingredients for the chia puddings until well combined and there are no lumps.
2. Divide the mixture evenly between two small glasses or ramekins. Cover each with plastic wrap and refrigerate overnight.
To prepare the passion fruit sauce:
1. Combine the first four ingredients for the passion fruit sauce in a small saucepan over medium heat. Whisk together until the sugar dissolves and the mixture comes to a boil.
2. Reduce the heat to low and simmer for about 5 minutes, stirring occasionally. Remove from heat and let cool completely.
To assemble the parfaits:
1. Place one serving of chilled chia pudding in each of six tall glasses or bowls. Top each with a layer of sliced mango and sprinkle with 1 tablespoon of shredded coconut.
2. Pour equal amounts of the prepared passion fruit sauce over each layer.
3. Garnish with fresh mint leaves and serve immediately.
