1. In a medium bowl, combine the hemp hearts, chia seeds, and ⅓ cup of water. Mix well and set aside for 5 minutes until thickened.
2. Meanwhile, prepare the fruit layer by mixing the diced mango and passion fruit pulp in a separate bowl.
3. Once the chia seed mixture has thickened, stir in the remaining ⅔ cup of almond milk and vanilla extract.
4. Divide the chia seed mixture between two glasses or ramekins.
5. Spoon the prepared fruit layer over the top of each portion of chia seeds.
6. Cover with plastic wrap and refrigerate for at least 2 hours or up to overnight.
