1/2 cup (120 ml) unsweetened pineapple juice concentrate
1/2 cup (120 ml) freshly squeezed orange juice (optional)
For the Spices:
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
Instructions:
1. In a high-speed blender, combine the chilled coconut milk base, 1 cup (240 ml) of water, and ice cubes until smooth. Set aside.
2. In a medium saucepan over low heat, mix together the pineapple juice concentrate, sweetened condensed milk, and salt. Stir occasionally until the mixture thickens and comes to a simmer. Remove from heat.
3. Add the contents of the saucepan to the blended coconut mixture in a large pitcher. Whisk well.
4. Pour the cocktail through a strainer into glasses filled with ice. Top each serving with a few sprigs of mint and serve immediately.
Note: You can adjust the sweetness to your liking by adding more or less sweetened condensed milk. If you prefer a thicker consistency, use only 1/2 cup (120 ml) of water when making the coconut milk base.
