For the base:

1 tbsp. raw cacao powder
1/4 tsp. sea salt flakes
1/4 cup rolled oats
1/2 cup chopped walnuts or pecans

For the filling:
1 large ripe mashed banana (about 1 cup)

1 tbsp. lemon juice

Instructions:

1. Preheat the oven to 350°F (180°C). Line a small baking sheet with parchment paper.

2. For the base, combine all the ingredients in a food processor until well combined and sticky. If using a high-powered blender like Vitamix or Blendtec, you may need to stop and scrape down the sides once or twice.

3. Divide the mixture into two equal parts and shape each part into a round ball. Flatten each ball slightly between your palms. Place one ball onto the prepared baking sheet and press down gently to flatten it further. Use a fork to poke holes along the surface. Bake for 10 minutes or until golden brown. Remove from the oven and let cool completely.

4. Meanwhile, prepare the filling by combining all the filling ingredients in a bowl and mixing well. Taste and adjust seasonings if desired.

5. Once the base is cooled, spread the filling evenly over the flat side. Top with the other half of the base and press down lightly. Roll the entire thing around in your hands to adhere the edges together. Slice into wedges or serve as is. Enjoy!

Note: This recipe can be stored in an air-tight container in the refrigerator for up to 3 days or frozen for up to 3 months. To freeze, wrap each slice individually in plastic wrap and place them in a ziplock bag. Thaw overnight in the refrigerator before serving.
