Ingredients:

For the Crust (makes enough for 6-8 people):
1 cup gluten-free rolled oats
1/2 cup tapioca starch
1/4 cup arrowroot powder
1/4 cup coconut sugar or brown sugar
1/4 cup chia seeds
1 tablespoon cinnamon
1 teaspoon vanilla extract

Instructions:

1. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

2. In a large bowl, combine all crust ingredients except the chia seed mixture. Mix well until combined.

3. Transfer the mixture onto a clean surface and knead gently until a crumbly texture forms. Add more water if necessary.

4. Divide the crust mixture into two equal portions. Roll each portion into a ball. Place one ball between two sheets of parchment paper, and roll out until about ⅛ inch thick. Set aside.

5. For the Filling (makes enough for 6-8 people):

1 can (14oz) full-fat coconut milk (do not shake!)
⅓ cup maple syrup or agave nectar
½ cup unsweetened applesauce
1 ripe banana, mashed
2 tablespoons cornstarch or arrowroot powder
¼ teaspoon salt

Instructions:

1. Pour the coconut milk into a high-speed blender along with the apple sauce, maple syrup, bananas, cornstarch or arrowroot powder, and salt. Blend until smooth and creamy.

2. Pour the filling into a large mixing bowl. Stir in the remaining 1/2 cup of chia seed mixture from the crust. Cover and refrigerate for at least 2 hours or overnight.

3. To assemble the dessert:

For the Whipped Topping (makes enough for 6-8 people):
2 avocados, ripe but firm
⅓ cup maple syrup or agave need
1 tablespoon lemon juice
1 teaspoon vanilla extract

Instructions:

1. Scoop out the flesh of the avocado and place it in a large bowl.

2. Using an electric mixer, beat the avocado on medium speed until light and fluffy. This may take up to 5 minutes.

3. Add the maple syrup, lemon juice, and vanilla extract. Beat until fully incorporated.

4. Taste test the whipped topping – if it’s too thick, add more liquid; if it’s too thin, add more avocado.

5. Spread half of the whipped topping evenly over the bottom crust layer. Spoon the chilled filling mixture evenly over the top.

6. Sprinkle chopped nuts, fresh berries, and additional chia seeds for garnish.

7. Carefully spread the remaining whipped topping over the top. Garnish as desired.

8. Place the prepared dessert back in the fridge for another 30 minutes to set. Serve cold and enjoy!
