Instructions:
1. Cook the rice noodles according to package directions until al dente but still slightly firm.
2. Meanwhile, sautee the chopped vegetables in a pot over medium heat on the stove top for about 8 minutes, stirring occasionally.
3. Add the spices to the pan along with the oil, and mix well. Simmer the mixture for another minute.
4. When the noodles have finished cooking, drain them and add them to the simmering sauce. Stir well to coat all sides of the noodles.
5. Serve immediately and enjoy your delicious Vietnamese pho noodle soup!
