Ingredients

Adjust Servings:
For the Lemongrass Marinade:
2 stalks lemongrass, outer layers removed, finely chopped
4 cloves garlic, minced
2 shallots, minced
2 tablespoons vegetable oil
1 tablespoon soy sauce (or tamari for gluten-free)
1 tablespoon agave nectar or brown sugar
1 tablespoon rice vinegar
1 teaspoon ground turmeric
1/2 teaspoon red pepper flakes (adjust to your spice preference)
1 Salt and black pepper to taste
For the Mock Meat Skewers:
16 -20 pieces of vegan mock meat (such as seitan or tempeh), cut into cubes
1 Wooden skewers, soaked in water for 30 minutes
For Serving:
1 Fresh herbs (mint, cilantro, Thai basil)
1 Sliced cucumber
1 Dipping sauce (prepared nuoc cham sauce or a vegan alternative)
