Ingredients

Adjust Servings:
For the Chickpea Kebabs:
2 cans (15 oz each) chickpeas, drained and rinsed
1 small onion, finely chopped
3 cloves garlic, minced
1/2 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (adjust to taste)
1 Salt and black pepper to taste
2 tablespoons chickpea flour (for binding)
For the Tahini Sauce:
1/2 cup tahini
1 Juice of 1 lemon
2 cloves garlic, minced
2 -4 tablespoons water (to reach desired consistency)
1 Salt and black pepper to taste
For Serving:
1 Pita bread or flatbreads
1 Sliced cucumbers, tomatoes, red onions
1 Fresh mint leaves
