2 ripe mangoes, peeled and cubed

1 cup dairy-free yogurt

1/4 cup coconut milk (or any plant-based milk)

3 -4 tablespoons agave syrup or maple syrup (adjust to taste)

1/2 teaspoon ground cardamom

1 A pinch of saffron threads (optional)

1/4 cup chopped pistachios (optional, for garnish)
Directions
When ready to serve, run the popsicle molds under warm water for a few seconds to help release the popsicles. Garnish with chopped pistachios, if desired.
Adjust the sweetness according to your preference. The saffron threads add a lovely aroma and color but are optional. Enjoy these refreshing popsicles on a hot day or as a sweet treat anytime!

In a blender, combine the ripe mango cubes, dairy-free yogurt, coconut milk, agave syrup, ground cardamom, and saffron threads (if using). Blend until smooth and creamy. |

Pour the mango lassi mixture into popsicle molds, leaving a little space at the top for expansion. |

Insert popsicle sticks into each mold. If your molds don't have built-in sticks, freeze for about 30-45 minutes until the mixture is partially set, then insert the sticks. |
