Directions
Build flavors in layers: marinate and bake tofu for umami and texture, quick-pickle carrots and daikon for zing, and finish with fresh herbs and spicy mayo for a vibrant, authentic Vietnamese-inspired experience. Serve hot, garnished with lime. For gluten-free, use a gluten-free pizza crust and tamari instead of soy sauce. Adjust sriracha to taste for spice level. Cheese is optional for a more traditional bánh mì feel.

In another bowl, combine carrots, daikon, 2 tbsp rice vinegar, 1 tbsp sugar, and 1/4 tsp salt. Set aside to quick-pickle for at least 10 minutes. |

Place marinated tofu slices on a lined baking sheet. Bake for 12-15 minutes or until golden and slightly crispy. |
