For the Spicy Peanut Sauce:

1/4 cup peanut butter (unsweetened and unsalted)

2 tablespoons soy sauce or tamari (gluten-free if needed)

2 tablespoons rice vinegar

2 tablespoons maple syrup or agave nectar

1 tablespoon lime juice

1 -2 teaspoons Sriracha sauce (adjust to your preferred level of spiciness)

1 clove garlic, minced

2 -3 tablespoons warm water (to thin the sauce)

Directions
Adjust the level of spiciness in the sauce by adding more or less Sriracha sauce to suit your taste buds.

Cook the rice noodles according to the package instructions until they are al dente. Drain and rinse them under cold water to stop the cooking process. Set them aside. |

In a medium-sized pot of boiling water, blanch the broccoli florets for about 2 minutes or until they are bright green and slightly tender. Remove them from the boiling water and immediately place them in a bowl of ice water to cool down. Drain and set aside. |

In a large mixing bowl, combine the cooked rice noodles, blanched broccoli, sliced bell peppers, julienned carrots, sliced cucumber, chopped cilantro, and sliced green onions. |

To prepare the spicy peanut sauce, in a separate bowl, whisk together peanut butter, soy sauce (or tamari), rice vinegar, maple syrup (or agave nectar), lime juice, Sriracha sauce, minced garlic, and warm water. Add salt to taste. Adjust the spiciness and sweetness according to your preferences. |
