For the Skewers:

14 -16 wooden skewers, soaked in water for 30 minutes

1 block (14 oz) extra-firm tofu, pressed and cubed

1 red bell pepper, cut into chunks

1 green bell pepper, cut into chunks

1 red onion, cut into chunks

1 zucchini, sliced into rounds

1 Cherry tomatoes, for garnish

1 Lime wedges, for serving

1 Fresh cilantro and basil leaves, for garnish
Directions
Enjoy the bold and zesty flavors of Thailand with these Thai-inspired grilled tofu skewers. They’re a fantastic addition to your barbecue and will transport your taste buds to Southeast Asia.
You can adjust the level of spiciness by adding more or less Thai red curry paste to the marinade. Serve these skewers with steamed jasmine rice or Thai peanut sauce for extra authenticity.

In a bowl, whisk together all the marinade ingredients - soy sauce, fresh lime juice, brown sugar, minced garlic, Thai red curry paste, chopped cilantro, basil, and mint. |

Thread the marinated tofu cubes and prepared vegetables onto the soaked wooden skewers, alternating the ingredients as desired. |

Place the skewers in a shallow dish and pour the marinade over them, making sure they are evenly coated. Allow them to marinate for at least 30 minutes, turning occasionally. |

Preheat your grill to medium-high heat. |
