Ingredients

2 15 -ounce cans of chickpeas, drained and rinsed
1 small red onion, roughly chopped
3 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon cayenne pepper (adjust to taste)
1 Salt and pepper to taste
2 tablespoons chickpea flour (or all-purpose flour)
For the Tahini Sauce:
1/2 cup tahini
1 Juice of 1 lemon
2 cloves garlic, minced
1 Salt and pepper to taste
2 -4 tablespoons water (adjust for desired consistency)
For the Wrap Assembly:
1 Whole wheat or gluten-free pitas
1 Sliced cucumber
1 Sliced tomato
1 Sliced red onion
1 Sliced bell peppers
1 Lettuce or arugula leaves
