Korean-Inspired Baked Tofu Stir Fry Recipe

Ingredients List:

– 1 (14 oz) package extra firm tofu, drained and cut into cubes
– ¼ cup rice vinegar
– 2 tablespoons sesame oil
– 2 teaspoons minced garlic
– ½ teaspoon ground ginger
– 2 scallions, chopped
– 1 tablespoon soy sauce
– 1 tablespoon sesame seeds, optional
– 2 tablespoons sriracha sauce

Instructions:

1. Preheat the oven to 350°F.
2. Place the tofu cubes on a baking sheet and drizzle them lightly with the rice vinegar. Let sit for at least 1 hour.
3. Meanwhile, heat a large nonstick skillet over medium-high heat until hot. Add the sesame oil and sauté for a few seconds. Then add the minced garlic and ground ginger, cooking until fragrant.
4. Increase the heat to high and quickly add the tofu cubes, tossing well to coat evenly. Cook for about 2 minutes, being careful not to burn the bottom.
5. Now add the scallions and continue to cook until the tofu has turned golden brown, about 3-4 minutes longer. Remove from heat and set aside.
6. To finish the dish, combine the soy sauce, sesame seeds (if using), sriracha sauce, and remaining minced garlic in a small bowl. Gently mix together to incorporate all the ingredients.
7. Return the pan to high heat and reheat briefly before adding the marinade mixture. Quickly stir to combine everything.
8. Return the tofu cubes back to the pan along with their juices and stir well to distribute the marinade throughout the entire dish. Season to taste with salt and pepper if necessary.
9. Transfer the finished stir fry to a serving platter, garnish with additional sesame seeds (if desired), and enjoy as is or serve alongside your favorite side dish.
