The combination of flavors and textures make this a unique take on a classic smoothie recipe.
4. Ingredients List:
– 2 medium ripe avocados (about ½ cup)
– ¼ cup fresh thyme leaves
– ¼ cup fresh cilantro leaves
– 1 tablespoon ground flaxseed (optional)
– ½ cup packed spinach leaves (or other greens such as Swiss chard or kale)
– 1/3 cup raw shredded coconut (for texture only; no added sugar)

3. Place the almond milk in a separate container and stir in half a cup of cold water to create a slushy consistency.
4. Add the slushy almond milk to the pureed mixture and mix well.
5. Transfer the mixture back into the blender and pulse at high speed until thoroughly combined and very smooth.
6. Serve immediately or cover and refrigerate up to 2 days.
Note: Make sure to store any leftovers in an airtight container in the fridge within one day.
