Ingredients List:
1 cup freshly squeezed lime juice (from 1 large lime)
½ cup cassava sugar
1 tablespoon coconut oil
¼ teaspoon ground cumin
Pinch of salt
1 cup water
½ cup unsweetened almond milk
½ cup shaved ice (or crushed ice cubes)
Directions:
1. In a medium bowl, combine the lime juice, cassava sugar, coconut oil, cumin, and salt. Stir until well mixed and all ingredients are incorporated.
2. Pour the mixture into a measuring jug and let it sit for about 15 minutes to allow the sugar to dissolve completely.
3. Meanwhile, prepare the almond milk. If using store-bought almond milk, ensure it has no added sugars and follow the package directions if necessary. If making your own, whisk together half a cup of raw almonds and 1 cup of water. Let the mixture rest for at least 15 minutes before proceeding with the next step.
4. Add the water to the cassava sugar solution and stir gently. Carefully pour the mixture into a blender or food processor and pulse until smooth.
5. Transfer the liquid back into the jug and add the prepared almond milk. Give everything another good mix and transfer the mixture into a glass or other serving vessel.
6. Fill the remaining space with crushed ice and serve immediately.
