Instructions:
1. Cook your brown rice according to package directions. Meanwhile, soak the black beans in cold water overnight. Drain them well before proceeding.
2. In a large bowl, combine the brown rice, black beans, edamame, cucumber, red onion, green onion, ginger, and mint leaves.
3. Add the lime juice, olive oil, salt, and pepper to the mixture and mix well until incorporated. Taste the dressing and adjust seasonings as necessary.
4. Serve immediately, or refrigerate and serve within three days.
