Ingredients:
– 2 medium onions, chopped finely (about 1 cup)
– 1 tablespoon olive oil
– 2 cloves garlic, minced
– 1 bay leaf
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1 quart chicken broth
– 2 cans (14.5 ounces each) condensed cream of mushroom soup
– 1 cup half-and-half cream (or use milk if dairy-free)
– 1/2 cup grated Parmesan cheese, plus more for garnish
Directions:
1. In a large pot over medium heat, saute the chopped onions in the olive oil until softened but not browned, about 5 minutes. Add the garlic and bay leaf and cook until fragrant, about 1 minute.
2. Stir in the salt and pepper, and pour in the chicken broth. Bring the mixture to a simmer and let cook until the onions have broken down into a thick paste, about 15 minutes.
3. Meanwhile, in a small bowl, whisk together the condensed cream of mushroom soup with the half-and-half cream until smooth.
4. Once the onions are tender, stir in the cream of mushroom soup mixture and continue cooking over low heat, stirring occasionally, until slightly thicker than desired consistency.
5. Remove from the heat and add the grated Parmesan cheese and mix well. Season with additional salt and pepper to taste. Serve hot as a vegetarian option or with chicken broth as a soup base. Garnish with additional freshly shaved Parmesan cheese.
