Ingredients:
For the chia puddings:
1 large ripe avocado, peeled and pitted
1/2 cup unsweetened almond milk or coconut milk beverage
1 tsp pure vanilla extract
1 tbsp raw honey (optional)
For the topping:
1 small ripe mango, cubed
1/2 passion fruit, seeds removed, flesh chopped
1 tbsp shredded coconut flakes
1 tsp lime juice
1/4 tsp sea salt
Instructions:
Step 1: In a medium bowl, whisk together the avocado, almond milk, vanilla extract, and honey (if using). Stir well until smooth.
Step 2: Divide the mixture between four glasses or jars. Cover each jar with plastic wrap or a lid and refrigerate overnight or for at least 4 hours to allow the chia seeds to soften and the pudding to set.
Step 3: To prepare the topping, combine the mango, remaining passion fruit, coconut flakes, lime juice, and sea salt in a small bowl. Toss gently to mix.
Step 4: Once the puddings have set, top each one with the mango-passion fruit mixture. Enjoy immediately!
Note: If you prefer a thicker consistency, feel free to use less liquid in the chia puddings. For a spicier version, increase the amount of sriracha or hot sauce to taste.
