Ingredients:
* 1 cup medjool dates (pitted and chopped)
* 1/2 cup unsweetened almond milk (or water)
* 1/4 cup raw cashews (soaked overnight and drained)
* 1 tbsp. apple cider vinegar
* 1 tsp. lemon juice
* 1 tsp. vanilla extract
* 1/4 cup + 2 tbsp. raw tahini
* 1/4 cup + 2 tbsp. melted coconut oil (or more nut butter)
* 1/4 cup cocoa nibs
* 1 tsp. ground cardamom
* 1 tsp. ground cinnamon
* 1/2 tsp. sea salt
* 1/2 cup desiccated coconut flakes (unsweetened)
* 1/4 cup shredded coconut (unsweetened)

Instructions:

Step 1: Soak the dates and almond milk in a bowl for at least 2 hours to soften them.

Step 2: Meanwhile, place the soaked cashews and 1/4 cup of water in a blender and blend until smooth. Add the remaining ingredients (except for the desiccated and shredded coconuts) and mix well.

Step 3: Stir in the softened date mixture from Step 1. The batter should be thick and sticky. If necessary, adjust the consistency by adding more dates or water.

Step 4: Transfer the batter to a parchment paper-lined baking sheet or silicone mat. Use your fingers or a spoon to shape the batter into small balls about 1 inch in diameter. Place each ball on its own spot on the prepared baking sheet.

Step 5: Using another piece of parchment paper, gently press down on each ball to flatten slightly. This will help create an even surface for rolling later.

Step 6: Place the truffle sheets in the freezer for at least 1 hour or until firm.

Step 7: Once frozen, remove the truffle sheets from the freezer and use a knife dipped in warm water to cut through the truffles. Lift out the individual truffles using your hands or a fork and transfer them to a glass jar or container lined with wax paper. Store any extra truffles back in the fridge or freeze for up to 2 months.
