Ingredients:
For the Mousse:
• 1 cup unsweetened almond milk (or your preferred non-dairy milk)
• 1/4 cup unsweetened shredded coconut
• 1 tsp vanilla extract
• 2 tbsp cornstarch
For the Topping:
• 1 ripe mango, peeled and chopped into small cubes
• 1 tbsp maple syrup (optional)
Instructions:
1. In a small bowl, whisk together the almond milk, coconut milk, and vanilla extract until well combined.
2. In another small bowl, combine the cornstarch and 2 tablespoons of water using a fork until smooth. Gradually whisk the cornstarch mixture into the mango mixture.
3. Place both bowls in the refrigerator while you prepare the chia seed gel.
4. In a separate small bowl, mix together 1/4 cup chia seeds and 1/4 cup water until fully hydrated and gelatinous. Set aside.
5. Once the mango and coconut mixtures have thickened slightly, remove them from the refrigerator. Scoop out about 1/4 cup of each and place them in individual serving glasses.
6. Top each serving with the prepared chia seed gel and garnish with additional fresh mango cubes and mint leaves if desired.
Note: You can adjust the sweetness by adding more or less maple syrup to the mango topping. If you prefer a thicker consistency, simply use less liquid when making the chia seed gel.
