Description: These mango lassi popsicles are the perfect blend of sweet and spicy, made with fresh mangoes, yogurt, and cardamom. They’re vegan, gluten-free, dairy-free, refined sugar-free, and oil-free!

Ingredients:

For the base:
– 2 ripe mangoes (about 2 cups)
– 1 cup unsweetened almond milk
– 1/2 teaspoon ground cardamom
– Pinch of sea salt

For the sweeteners:
– 1/2 cup frozen pitted dates (or 1/4 cup chopped fresh dates)
– 2 tablespoons maple syrup (optional)

Instructions:

1. Combine all base ingredients in a high-speed blender and puree until smooth and creamy. You may need to scoop down the sides once or twice during processing.

2. Add both sweeteners to the blended mixture and continue to process until fully incorporated. If desired, you can add more maple syrup at this point for additional sweetness.

3. Pour the mixture into popsicle molds, leaving about 1/4 inch headspace at the top. Place the sticks in the center.

4. Cover the molds with plastic wrap or lid and freeze for at least 4 hours or overnight. Once frozen solid, remove from the molds carefully using warm water or under running water.

Note: Make sure your popsicle molds are well-chilled before pouring in the mixture. This will help prevent condensation and sticking when you remove them later.
