Instructions:
Day 1:
1. In a small bowl, combine the chia seeds mixture ingredients. Stir well until combined. Cover and refrigerate overnight.
Day 2:
1. Make the fruit compote by combining all the ingredients in a saucepan over medium heat. Cook until the berries have softened and released their juices. Remove from heat and let cool completely.
2. Divide the chilled coconut chia seed mixture into two equal portions. Place one portion in a tall glass. Add a layer of fruit compote on top. Sprinkle with additional chopped nuts if desired. Repeat with remaining ingredients.
3. Garnish with fresh fruits and optional toasted coconut flakes. Serve immediately.
