Ingredients:

For the Chia Seeds Porridge Base:
1 cup unsweetened almond milk
½ teaspoon ground cardamom
¼ teaspoon ground cinnamon
Pinch of ground turmeric
Pinch of ground coriander
½ teaspoon vanilla extract

For the Fruit Layers:

Optional: 1 ripe banana, sliced (for added sweetness and creaminess)

For the Mango Layer:

1 mango, diced
1 tablespoon lime juice
½ teaspoon maple syrup

For the Blueberry Layer:

1 cup fresh blueberries

Instructions:

Step 1: In a small saucepan over medium heat, whisk together the almond milk, cardamom, cinnamon, turmeric, coriander, and vanilla until well combined and slightly thickened. Remove from heat and set aside to cool completely.

Step 2: In a large bowl, combine the cooled porridge base with the diced mango, lime juice, and maple syrup. Mix well and allow the mixture to sit for about 10 minutes so that the mango can release its natural juices.

Step 3: Add the optional sliced banana to the mango layer if using.

Step 4: Spoon half of the prepared mango layer into four serving glasses or ramekins.

Step 5: Top each mango layer with ⅓ of the prepared blueberry layer. Gently press down on the blueberries to release their juices.

Step 6: Divide the remaining chilled porridge base evenly among the glasses. You should have enough to cover the top of the fruit layers.

Step 7: Cover each glass with plastic wrap and refrigerate for at least 2 hours or overnight. The longer you let it sit, the thicker the chia seed pudding will become.

Step 8: Before serving, garnish each parfait with fresh mint leaves and enjoy!

Note: To make this a more substantial meal, feel free to serve alongside some roasted nuts, seeds, or whole grain crackers.
