Ingredients (for 4 servings):

For the Crispy Sesame Tofu:

* 1 block extra-firm firm tofu, drained and cut into bite-sized cubes
* 1 cup cornstarch or rice flour
* 2 teaspoons ground black pepper
* 1 tablespoon vegetable oil

For the Tangy Mango Salsa:

* 1 medium mango, diced
* 1/2 small red bell pepper, seeded and finely chopped
* 1/4 cup cucumber, thinly sliced
* 1/4 cup red cabbage, thinly sliced
* 1/4 cup green onions, thinly sliced
* 1 clove garlic, minced
* 1 tablespoon fresh lime juice
* Salt and pepper to taste

Instructions:

1. For the Crispy Sesame Tofu:
Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Combine the cornstarch or rice flour and black pepper in a shallow bowl. Add the tofu cubes and toss until evenly coated.
Heat the vegetable oil in a large non-stick skillet over medium-high heat. Add the coated tofu and cook for about 5 minutes per side, or until golden brown and crispy. Transfer the crispy tofu to the prepared baking sheet and bake for an additional 10 minutes, turning once halfway through.

2. For the Tangy Mango Salsa:
Whisk together the lime juice, salt, and pepper in a small bowl. Add the mango, red bell pepper, cucumber, cabbage, green onions, and garlic. Gently mix everything together. Set aside.

3. Assembly:
Divide the cooked rice among four serving plates. Top each portion of rice with a scoop of the tangy mango salsa. Place two pieces of crispy sesame tofu on top of the salsa. Serve immediately.

Difficulty Level: Easy

Note: This recipe can be made ahead of time up to step #1 (preparing the ingredients) and stored in the refrigerator for 2 days. To prepare, simply follow steps 1-3 as instructed but skip the roasting process for the tofu. When ready to serve, place the frozen tofu cubes onto a plate and microwave for 1 minute at 50% power, or until thawed. Then, continue with the rest of the instructions.
