By using an air fryer, we can create a crispy texture without adding any oil, making it not only healthier but also more environmentally friendly. The addition of fermented ingredients like miso and sauerkraut adds depth of flavor and probiotics to boost your gut health.

* 2 blocks extra firm tofu
* 1/4 cup water
* 1 tablespoon apple cider vinegar
* 1 teaspoon maple syrup
* 1 teaspoon Dijon mustard
* 1/2 teaspoon salt
* 1/2 teaspoon black pepper
* 1/4 teaspoon smoked paprika
* 1/4 teaspoon onion powder
* 1/4 teaspoon garlic powder
* 1/4 teaspoon cayenne pepper (optional)

Instructions:
1. In a small bowl, combine the ingredients for the marinade – apple cider vinegar, water, maple syrup, Dijon mustard, salt, black pepper, smoked paprika, onion powder, garlic powder, and cayenne pepper if using. Mix well to dissolve the sugar.
2. Cube or slice the tofu into bite-sized pieces. Place them in a large resealable bag and pour the marinade over them. Seal the bag and give it a good shake to coat all sides.
3. Transfer the bagged tofu to the basket of your air fryer. Set the temperature to 200°F (93°C) and set a timer for 10 minutes.
4. Shake the bag gently every few minutes during cooking to ensure even browning.
5. After 10 minutes, carefully remove the tofu from the air fryer and serve hot immediately. Enjoy as a snack or add to salads, rice bowls, or sandwiches.

Note: If you prefer a crispier texture, increase the cooking time by another minute or two at a lower temperature (around 180°F/82°C).
