* 2 cups uncooked glutinous rice (also known as sticky rice)
* 1 cup unsweetened coconut milk beverage
* 1 ripe medium-size mango, sliced into small cubes (about 1 1/2 cups)
* 1 tablespoon maple syrup or agave nectar
* 1 teaspoon vanilla extract

Instructions:
1. Cook the glutinous rice according to package directions using vegetable broth instead of water. Set aside.
2. In a high-speed blender or food processor, combine the coconut milk, maple syrup, and vanilla extract until smooth. Add more liquid if needed to reach desired consistency.
3. Pour the mixture over the cooked glutinous rice and stir well to combine. The rice should become creamy and sticky. If too dry, add more coconut milk.
4. Fold in the mango cubes and optional nuts. Mix gently so they don’t break up the rice.
5. Serve immediately on individual plates or bowls. Enjoy your delicious Thai-inspired vegan mango sticky rice!
