For the sorbet base:
1 ripe mango (about 1 lb), peeled and chopped
1 cup unsweetened coconut flakes
1/4 cup full-fat canned coconut milk
1 tsp freshly squeezze lime juice

Instructions:
1. In a blender, combine all the ingredients for the sorbet base and puree until smooth.
2. Pour the mixture into a large bowl or container and freeze for at least 4 hours or overnight.
3. After chilling, transfer the frozen mixture back into the blender and pulse until semi-smooth (some small ice crystals are okay).
4. Pour the prepared sorbet into individual serving containers and return them to the freezer for another hour or two before serving.
