For the Coconut Milk Mixture:

½ teaspoon grated lime zest (optional)
1/3 cup raw agave nectar or maple syrup (or more to taste)
¼ teaspoon ground cardamom
Pinch of sea salt
1 (13.5-ounce) can full-fat coconut milk, well-shaken
For the Chia Seed Mix:
2 tablespoons black sesame seeds
2 tablespoons chia seeds
Instructions:
1. In a medium bowl, whisk together the ingredients for the coconut milk mixture until smooth. Set aside.
2. To make the chia seed mix, combine the black sesame seeds and white chia seeds in a small bowl. Stir well.
3. Add the mango flesh to the bottom of four glasses or ramekins. Divide the prepared chia seed mix evenly among the glasses.
4. Pour the coconut milk mixture over each serving, dividing it equally. Place the filled glasses into the refrigerator for about 15-30 minutes, or until the chia seed mix has formed a gelatinous consistency.
5. Top each parfait with fresh mango slices, chopped nuts, and a drizzle of honey if desired. Serve immediately.
Note: You can also substitute other fruits such as blueberries, strawberries, or bananas for the mangoes. Adjust the amount of sweeteners according to your preference.
