Ingredients

2 cans full-fat coconut milk (about 1 1/2 cups solid white part of the milk)
1 ripe mango, chopped into small pieces
1/4 cup frozen or fresh passion fruit juice (from about 2 large passion fruits)
1/2 cup chia seeds
1 tablespoon maple syrup or honey (optional)
Pinch of sea salt
Ice cubes from 1/2 cup water
Optional toppings: shredded coconut, sliced mango, mint leaves, granola, etc.

Ingredients:
* 2 cans full-fat coconut milk (about 1 1/2 cups solid white part of the milk)
* 1 ripe mango, chopped into small pieces
* 1/4 cup frozen or fresh passion fruit juice (from about 2 large passion fruits)
* 1/2 cup chia seeds
* 1 tablespoon maple syrup or honey (optional)
* Pinch of sea salt
* Ice cubes from 1/2 cup water
* Optional toppings: shredded coconut, sliced mango, mint leaves, granola, etc.

Instructions:

1. Add all ingredients except for the ice cubes and optional toppings to a blender and puree until smooth. If you’d like a thinner consistency, add more water as needed.

2. Pour the mixture into four individual serving glasses or ramekins. Place two popsicle sticks or skewers in each serving and gently swirl to create a marbled effect.

3. Cover each glass with plastic wrap and secure with rubber bands or lid. Place in the refrigerator to set for at least 4 hours or overnight. The longer it sets, the firmer the texture will be.

4. Before serving, remove the plastic wrap and place each glass in the freezer for another 10-15 minutes if desired. Remove from the freezer and let stand for a few minutes so the chilled mixture doesn’t shock your taste buds. Serve immediately and enjoy!

Note: You can adjust the sweetness levels by adding more or less mango and/or maple syrup. If using maple syrup, start with just 1 tablespoon and increase according to your preference.
