For the topping:

Day 1:

1. In a medium bowl, whisk together the almond milk, tapioca flour, maple syrup, and pinch of salt until well combined.

3. Pour the mixture into four small jars or ramekins.

Day 2:

1. Cover each jar with plastic wrap and place them in the refrigerator overnight.

Serve:

1. To prepare the chia puddings, divide the contents of one jar evenly among four serving glasses or bowls.
2. Top each serving with half of the mango, mixed berries, and mint.
3. Serve immediately.

Note: The longer you let the chia seeds soak, the creamier the texture will become. If you prefer a thicker consistency, simply let the puddings sit for a few hours before adding any liquid ingredients.
