Steps
1
Done
|
Using a spiralizer, turn the zucchinis into zucchini noodles or "zoodles." Set aside. |
2
Done
|
In a large pan, heat the olive oil over medium heat. |
3
Done
|
Add the minced garlic and sauté for about 1 minute until fragrant. |
4
Done
|
Pour in the diced tomatoes, dried basil, dried oregano, salt, and pepper. If you like it spicy, add red pepper flakes to taste. |
5
Done
|
Stir well and let the sauce simmer for about 10-15 minutes to thicken and allow the flavors to meld. |
6
Done
|
While the sauce is simmering, you can lightly sauté the zucchini noodles in a separate pan with a touch of olive oil for 2-3 minutes until they soften slightly. Be careful not to overcook them; they should remain slightly crunchy. |

Once the sauce has thickened to your liking, taste and adjust the seasoning if needed. |
8
Done
|
Serve the zucchini noodles with the tomato sauce on top. |
