* 2 slices of your favorite whole grain or gluten-free bread, lightly toasted
For the Crispy Fried Shallots:
* 1/2 cup thinly sliced fresh shallots
* 1 tablespoon filtered water
* 1 teaspoon coconut aminos (optional)
* Pinch of sea salt and black pepper
* Olive oil or ghee (for frying)
Instructions:
1. Make the Crispy Fried Shallots: Preheat a small saucepan over medium heat and pour in enough olive oil or ghee to reach about 1/4 inch deep. Place the pan in a low position so it doesn’t splatter while heating up.
2. Add the shallot slices to the hot oil and fry them until they are golden brown and crispy, about 2-3 minutes per side. Remove the shallots from the oil using a slotted spoon or tongs and place them on a paper towel-lined plate to drain any excess oil. Set aside.
3. Assemble the Avocado Toast: Slice the top off one of the avocado halves and remove the pit from the other half. Gently scoop out the flesh of both avocado halves into a bowl, leaving a bit of the shell intact at the bottom. Mash the avocado slightly with a fork but leave some chunks for texture.
4. Add the lemon juice, sea salt, and black pepper to the mashed avocado and mix well. Taste and adjust seasoning as desired.
5. To assemble the toast, spread the creamy avocado mixture evenly onto the two slices of toasted bread. Top each slice with crispy fried shallots and a sprinkling of chopped parsley or cilantro. Serve immediately.
Note: If you prefer a smoother consistency for your guacamole, simply blend everything together in a food processor instead of mashing it. You can also add diced tomatoes, roasted red bell peppers, or grated carrots for additional flavor and nutrients.
