1/4 cup grated fresh ginger

Instructions:
1. In a blender, combine all the ingredients for the coconut water kefir. Blend until smooth.
2. Pour the coconut water kefir into glasses. You should have enough for about 2 servings.
3. Make the pineapple-ginger syrup by combining all the ingredients in a small saucepan over medium heat. Stir well to dissolve the sugar and bring the mixture to a simmer. Simmer for about 5 minutes, stirring occasionally. Remove from heat.
4. Allow the syrup to cool completely before pouring it over the coconut water kefir. The cold liquid will help preserve the live cultures in the yogurt.
5. Serve immediately and enjoy your refreshing Caribbean-inspired drink!
Note: If you don’t like things too spicy, you can reduce the amount of ginger used in the syrup. Also, feel free to experiment with different fruits and flavors to create your own unique twists on this recipe.
