1 Salt to taste
For the Salsa:
2 ripe tomatoes, diced
1/2 red onion, finely chopped
1/2 cup fresh cilantro, chopped
1 Juice of 1 lime
1 Salt and pepper to taste
For the Plantains:
2 ripe plantains, peeled and sliced into rounds
1 Cooking oil for frying
For Serving:
8 small corn or gluten-free tortillas
1 Fresh cilantro leaves
1 Vegan sour cream or yogurt (optional)
1 Lime wedges (optional)
