For the Salsa:

2 ripe tomatoes, diced

1/2 red onion, finely chopped

1/2 cup fresh cilantro, chopped

1 Juice of 1 lime

1 Salt and pepper to taste

For the Plantains:

2 ripe plantains, peeled and sliced into rounds

1 Cooking oil for frying

For Serving:

8 small corn or gluten-free tortillas

1 Fresh cilantro leaves

1 Vegan sour cream or yogurt (optional)

1 Lime wedges (optional)
Directions
Assemble your Caribbean-Inspired Vegan Jerk Tofu Tacos by placing a generous amount of jerk tofu on each tortilla, followed by salsa and plantains. Garnish with fresh cilantro leaves and serve with lime wedges and vegan sour cream or yogurt if desired.
Adjust the level of spiciness by adding more or less jerk seasoning to the tofu marinade according to your preference.
