Ingredients:
* 2 medium sweet potatoes (about 1 pound), peeled and cubed
* 1 can (15 ounces) chickpeas, drained and rinsed
* 1 cup frozen spinach
* 1 banana, sliced into small pieces
* 1/2 teaspoon ground cinnamon
* 1/2 teaspoon ground ginger
* 1/4 teaspoon sea salt
* 1 cup unsweetened almond milk
* Ice cubes (optional)
* Optional toppings: chopped walnuts, sliced strawberries, shredded coconut, granola, etc.
Instructions:
1. Add all ingredients except optional toppings to a high-speed blender and puree until smooth. You may need to stop the blender occasionally to scrape down the sides.
2. Divide the mixture evenly between two large bowls. If desired, top each serving with ice cubes to create a thicker consistency.
3. Place the prepared smoothie bowls under the broiler on low heat for about 5 minutes, or until the edges begin to turn slightly brown and bubbles form. Keep a close eye on them, as they can burn easily. Remove from the oven when done.
4. Garnish each smoothie bowl with desired toppings and enjoy!
