Description: This vegan chocolate mousse parfait is not only incredibly easy to make but also packed with deliciousness. Made with just five simple ingredients – avocado, cacao powder, maple syrup, coconut milk, and dates – it’s a guilt-free indulgence that everyone will love!

Ingredients:

* 3 ripe medium-sized avocados
* 1/2 cup unsweetened cocoa powder
* 1/4 cup plus 2 tablespoons pure maple syrup (for serving)
* 1 can full-fat coconut milk (14 oz), well shaken
* 12 medjool dates, pitted and roughly chopped

Instructions:

1. Add all the ingredients into a high-speed blender like Vitamix or Blendtec and process until smooth and creamy. Scrape down the sides as needed.
2. Transfer the mixture to individual glasses or ramekins and refrigerate for at least 4 hours or overnight.
3. To serve, top each serving with a dollop of date caramel sauce (made by mixing 2 tablespoons date paste with 2 tablespoons hot water and whisking until smooth). Garnish with fresh fruit, cacao nibs, or vegan sprinkles if desired.
