Directions

For the Lentil Patties: |

Rinse lentils under cold water and remove any debris. In a saucepan, combine lentils, water, and bay leaf. Bring to a boil, then reduce heat and simmer for about 20-25 minutes or until lentils are tender but not mushy. Drain any excess liquid. |

In a large skillet, heat a bit of olive oil over medium heat. Add diced onion and garlic. Sauté for 2-3 minutes until softened. Add grated carrot and sauté for another 2 minutes. |
