Feel free to customize the vegetable selection to your preference, and adjust the seasoning according to your taste. These skewers are delightful on their own or served with a side of couscous or pita bread and hummus.

In a bowl, combine the minced garlic, lemon juice, balsamic vinegar, and extra-virgin olive oil (if using). Add dried oregano, salt, and black pepper. Mix well to create the Mediterranean marinade. |
