Ingredients List:
1 tablespoon olive oil
½ pound ground beef (85% lean)
¼ cup finely chopped green onions
1 large clove of garlic, minced
2 teaspoons finely grated ginger
1 tablespoon cornstarch
1 teaspoon chili powder
1 teaspoon soy sauce
1/2 teaspoon sugar
1 medium sweet potato, peeled and cubed
Salt and black pepper to taste
Cooking Instructions:
Heat the olive oil in a non-stick pan over medium heat until shimmering. Add the ground beef and cook, stirring occasionally, until browned. Remove from pan and set aside.
Add the green onion and garlic to the pan and cook for about 1 minute, until fragrant. Stir in the remaining ingredients except for the sweet potato and cook for another minute or two, until thickened slightly.
Pour the mixture back into the pan containing the meat, toss everything together, and season with salt and pepper to taste. Cook until heated through, about 1-2 minutes more.
Meanwhile, boil water in a separate pot for the sweet potato. Once the water comes to a boil, add the sweet potato and simmer for about 10-12 minutes, or until tender when pierced with a fork. Drain well and mash lightly with a fork. Season with salt and pepper to taste.
Return the sweet potato to the skillet along with the sauteed meat mixture and mix thoroughly. Serve immediately.
