Description: This scrumptious chia pudding parfait boasts an exquisite blend of traditional Moroccan spices, such as cinnamon, cardamom, and nutmeg, combined with a medley of fresh fruits and nuts. It’s not only vegan but also gluten-free, oil-free, raw, high-protein, seasonal, whole food plant-based, kid-friendly, budget-friendly, and so much more!

For the Chia Seed Base:
* 1/2 cup + 2 tablespoons chia seeds (about 4.5 oz)
* 1/4 teaspoon salt
For the Fruit Layer:
* 1 medium ripe mango (about 1 cup), cubed
* 1 banana (about 1/2 cup), sliced
* 1/2 cup frozen berries (blueberries, strawberries, raspberries, blackberries, etc.)
For the Middle Layer:
* 1/4 cup unsweetened shredded coconut
* 1/4 cup chopped walnuts or pecans
* 2 tablespoons maple syrup or agave nectar
Optional Garnish Ingredients:
* 1/4 cup toasted sesame seeds
* 1/4 cup chopped dates (for extra sweetness and moisture)
Instructions:
1. To prepare the chia seed base, combine the chia seeds and water in a mixing bowl. Stir well until no pockets of water remain. Cover and refrigerate for at least 1 hour or up to overnight.
2. To assemble the dessert, divide the prepared chia seed base into four equal portions. Add the fruit layer ingredients (mango, banana, and frozen berries) on top of one portion and mix gently. Place another portion of the chia seed mixture directly on top, followed by the middle layer ingredients (coconut, nuts, and maple syrup). Continue assembling the layers in this order until all the ingredients are used up.
3. Garnish each serving with additional toasted sesame seeds, chopped dates, and optional edible flowers like rose petals or lavender buds. Serve immediately after assembly or store covered in the fridge for up to 2 days. The flavors will continue to intensify over time!
Note: If you prefer a thicker consistency, use less liquid when making the chia seed base. For a smoother texture, puree the fruit layer ingredients before adding them to the base. Adjust the amount of sugar according to your taste preference.
