Instructions:
1. Deseed and chop the jalapeño pepper if desired. Set aside for later use.
2. In a high-speed blender, combine all the ingredients except the coconut flour, egg, and water until smooth.
3. Add the coconut flour, egg, and water mixture to the blended mixture one at a time, ensuring each addition is well incorporated before adding more. Blend until a thick batter forms.
4. Heat a large nonstick skillet over medium heat. Using a fine mesh strainer, scoop out approximately 2 tablespoons of the batter into your hand and gently squeeze out any excess liquid. This will help prevent the batter from running off the fritter during cooking.
5. Place the batter in your hand into the center of the skillet and flatten slightly. Cook for about 2-3 minutes or until small holes start appearing on the surface. Carefully flip the fritter and continue cooking for another 2-3 minutes or until golden brown.
6. Remove the fritter from the pan using a slotted spoon and place it on a paper towel-lined plate. Continue making the rest of the fritters following the same procedure.
