Ingredients
* 1 pound (450 grams) of your favorite mushroom blend (e.g., cremini, shiitake, oyster, king trumpet), sliced
* 1 medium onion, finely chopped
* 1 clove garlic, minced
* 1/2 cup (70 grams) of gluten-free breadcrumbs
* 1 tablespoon of flaxseed meal
* 1 teaspoon smoked paprika
* 1/2 teaspoon sea salt
* 1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Place the mushrooms on the prepared baking sheet and drizzle with 1 tablespoon of water. Toss gently to coat. Roast for about 15 minutes or until tender and lightly browned. Set aside to cool slightly.
3. Meanwhile, heat a large non-stick skillet over medium-high heat. Add the oil and sauté the onions until translucent, about 5 minutes. Reduce the heat to low and continue cooking, stirring occasionally, for another 10-15 minutes or until golden brown and caramelized. Remove from the pan and set aside.
4. In a small bowl, whisk together the remaining 1 tablespoon of water, breadcrumbs, and arrowroot powder until well combined. Transfer to a plate.
5. Prepare the burgers by placing a portion of the mushroom mixture onto the center of each burger patty. Divide the caramelized onions among the patties as desired. Sprinkle each patty evenly with the seasoning mix.
6. Form into patties and place them on the prepared baking sheet. If you’re using a silicone mat, press down lightly to flatten the patties. Alternatively, use your hands or a spatula to shape them into round discs.
7. Roast for about 20-25 minutes or until firm to the touch and slightly charred on both sides. Flip halfway through roasting.
8. While the burgers are roasting, assemble the toppings by combining all the ingredients in a large bowl and tossing well. Adjust the seasoning if necessary.
9. To serve, spread some of the fermented cashew sauce onto the bottom halves of the buns. Top with arugula leaves, followed by the roasted portobello mushroom caps. Next, add a few slices of avocado and sprouts. Finally, top with the burger patties and cover with the bun tops. Serve immediately.
