Instructions:
For the buns:

1. Dissolve the yeast: In a large mixing bowl, combine the warm water and sugar. Sprinkle the yeast over the top and let sit until foamy, about 5 minutes.

2. Create the sponge: Add the flour and salt to the yeast mixture and stir well to combine. Cover the bowl with plastic wrap and set aside in a warm place until doubled in size, about 1 hour.

3. Knead the dough: Once the dough has risen, add the olive oil and continue to mix until a smooth and elastic dough forms.

4. Form the buns: Divide the dough into 12 equal pieces and shape each piece into a ball. Place the balls onto a greased baking sheet, cover with plastic wrap, and allow to rest for another 30 minutes.

5. Proof the buns: Preheat the oven to 375°F (190°C). Punch down the dough and roll out each portion into a thin circle. Brush the tops with melted butter or olive oil. Place the buns on a parchment paper-lined baking sheet and bake for 10-12 minutes or until golden brown.

6. While the buns are proofing, prepare the burgers: Mix all the ingredients for the burger patties together well. Using wet hands, form the mixture into 12 evenly sized patties. Heat a large non-stick skillet or grill pan over medium heat. Cook the burgers for about 3-4 minutes per side, or until browned and cooked through.

7. Assemble the burgers: Split the buns and layer with desired toppings such as lettuce, tomato, pickles, onions, ketchup, mustard, mayonnaise, and any additional sauces or condiments. Serve immediately.
